Asking a deposit would just make situations like this one more awkward (even if less common).

Without asking one, the only investment the customer has put into it is the time to make the order, making you completely justified to do what you wish with the end product.

I like the trick where you just rest the fipple on the bottom of the lip and blow into the windway to make an airy sound. You can disguingish notes just fine, and it's very quiet.

You can certainly try levering the windway back up with a secredriver or pliers or the like. My problem was that I unconciously used the blade as a fulcrum. things went downhill from there.
